'Fit Kitchen' Curry (French Masala)
A perfect, quick weeknight meal to have prepped during quarantine is this Paleo chicken curry recipe. Depending on what you serve this over, it can also become keto-ized for any fit foodies out there. What makes it ideal for the 'Fit Kitchen' diet or regiment is that it is full of vegetables, low-carb, and with zero sugar. Prepping out ready-made meals becomes even easier with ready-to-use blended spices on deck. We scored the last packet of Vadouvan (French derivative of Indian masala) curry powder off the shelf at Artisanal Foods, then proceeded to whip up this bad boy. With deep aromatics such as shallots and garlic, it's full of enough flavor in it's sauce alone, which was also a match made in heaven for our free range chicken thighs. Eight servings, you ask? Yes :) because you'll be eating this one all week:
Bring olive oil to high heat in stock pot or large skillet. Add chicken and cook until both sides of pieces browned. Remove from pan and set aside, keep remaining oil in stock pot.
Add zucchini and onion, saute until lightly browned. Add garlic paprika, curry powder, and salt/ Saute together for 30 seconds.
Remove thigh meat from bone before adding chicken back into pot, along with coconut milk. Bring entire mixture to a boil.
Reduce heat to low, cover with lid, and allow to simmer for 30 min. or until meat becomes tender. For last 5 minutes of cooking, add tomatoes to pot.
Serve in small bowl with, coconut broth. Top with cilantro or basil.
